Fall is coming...





Now that fall is officially here, you've probably already noticed people sniffling or appearing a bit less cheery than they did throughout the summer. And though the season is undeniably beautiful, it does require a bit more of an effort to keep yourself healthy and happy. With the changing season, now is the perfect time to boost your immune system. Here are a few tips to boost your immune system and your spirits!

1.     Buy foods in season and eat you Fall colors- Fall foods are vibrant, colorful and nourishing. One rule of thumb is that the more colorful the fruit, the better it is for your health and your immune system.Some of  best natural immune-boosters are: to drink plenty of fresh water, eat plenty of raw foods, garlic, lysine, probiotics, Vitamins B, C and D.
2.     Exercise in the Season- this is the perfect time of year for those longer hikes or bike rides that were a little too much in the hot summer months.
3.     Pamper Yourself- Get a massage or a facial. Changes in humidity and temperatures can drastically affect your skin’s balance and sleeping patterns.We advise keeping your skin hydrated, especially on areas of the body that tend to get drier, like elbows and feet. Get a facial for your skin type. Don’t wait until winter when it may be too late to prepare your skin for harsher temperatures. A massage can relieve pain and stiffness as the weather changes, build up your immune system, and a 1 hour massage can equal 4 hours of sleep.

Recipe of the Month
Paleo & Keto Pumpkin Spice Latte
This paleo and keto pumpkin spice latte is pure fall in a mug! Prep a large batch-to-go for the week and feel free to 'bulletproof' it with MCT oil and grass-fed butter.

Instructions
  1. Please see video for deets 'n tricks!
  2. Heat up pumpkin puree with pumpkin pie spice in a small saucepan over medium/low heat. Stir constantly for 2 to 3 minutes, until fragrant and cooked.
  3. Stir in sweetener of choice, mixing until just combined. Pour in milk, and simmer until warm. Watch carefully that it doesn't boil over! Remove from heat.
  4. Add in vanilla extract and whisk until light and frothy, 30 seconds to a minute. The pumpkin spice mix can be refrigerated for 4-5 days at this point (so feel free to whip up a large batch for the week!). 
  5. Pour espresso or coffee in a mug, and add the pumpkin spiced milk. For a bulletproof version, you can alternatively add in some MCT and/or grass-fed butter at the end and blend it all with an immersion blender. Top with whipped cream and a touch of pumpkin pie spice.

August is Children’s Eye Health and Safety Month...

As the end of the summer approaches, back-to-school time is top of mind for many parents. One of the most important ways to ensure a successful school year is to make your child’s sight a priority. This is a perfect time of the year to schedule a vision screening
Sports Safety
Eye injuries are the leading cause of blindness in children in the United States and most of those injuries are sports-related. Protective eyewear is the key to sports eye safety as ninety percent of sports-related eye injuries can be avoided with the use of protective eyewear. Even if your child’s sports league does not require eyewear, you as a parent have a right to insist on protecting your child’s eyesight.

Low Carb Peach Cheesecake Bars

Ingredients
Text Box: cheesecake filling:
• 2 (.3 oz) boxes Sugar Free Peach Jello
• 1 cup boiling water
• 1 cup ice water
• 12 oz cream cheese, softened
• 3 tablespoons Swerve or equivalent granulated sweetener
• 3/4 cup heavy whipping cream

crust:
· cooking spray                                                   
· 1 1/4 cups almond flour
· 1/4 cup Swerve or equivalent granulated sweetener
· 1/4 cup butter, cold
· 1/4 tsp salt
· 1/2 teaspoon xanthan gum

Instructions
1.  Preheat the oven to 350 degrees F and spray am 8 x 8 inch pan with cooking spray.
2.  Dissolve the Jello in 1 1/2 cup boiling water.  Fill a 4 cup measuring cup with ice up to the 1 1/2 cup mark.  Fill with cold water to the 1 1/2 cup line.  Add the dissolved Jello to the ice water and stir to melt the ice cubes.  Put the Jello into the refrigerator while you make the crust.
3.  Add all the crust ingredients to a food processor or high powered blender.  Blend until small crumbles form.  Press the crumbles into the bottom of the pan.
4.  Bake for 12-14 minutes until lightly browned.  Move it to the countertop to cool.
5.  In a large bowl, mix together the sweetener and the softened cream cheese with an electric hand mixer until light and fluffy.
6.  Make sure that the Jello is fully chilled.  Add to the cream cheese mixture and beat with the electric mixer until smooth and combined.
7.  Chill the Jello mixture in the refrigerator for 1 hour until it begins to thicken.
8.  In a large bowl, whip the cream with an electric hand mixer until stiff peaks form.
9.  Fold the whipped cream into the Jello mixture with a rubber spatula. Gently mix until the mixture is smooth and the whipped cream is evenly distributed.
10.  Pour the cheesecake mixture into the crust. Let it set in the fridge for at least 6 hours, before serving. Do not cover with plastic wrap until the cheesecake is set.
